These courses are great for the keenest cooks among you. Each masterclass focuses on particular wild ingredients, looking at how they can be used in exciting ways to create delicious dishes. The classes are designed to go beyond simple identification and discover the culinary potential of delicious seasonal wild edibles.  You will be involved in preparing and cooking food over the wood fire and of course tasting the dishes throughout the day. We will demonstrate some preserving methods and everyone will make some preserves to take home. We will talk about foraging and plant identification and together prepare a lunch based around our foraged ingredients. These one day courses are great for those who cook already and want to know more about using wild ingredients or indeed anyone who likes to try something new.  All our masterclasses are based in our woodland kitchen and all the cooking will be on wood fires or in our wood fired earth oven.

In the second episode of the series (29th November 7.30pm), Gethin Jones and Charlotte Uhlenbroek head to North Yorkshire to discover the secret treasures along its famous coastline. 

Back on dry land Charlotte is joined by foraging expert Chris Bax and the pair go in search of edible seaweed to compliment the lobster Charlotte caught earlier in the day. After collecting several varieties they meet up with Gethin on the beach to sit on the sand and enjoy a delicious meal prepared by Chris using the day's spoils.
